Healthy Apple Walnut Oat Muffins

This week, Tuesday is another election day here in my home town of San Diego. (Thanks to our embarrassing former mayor.) My husband and I are poll workers again for this election. Election days are long days for poll workers. We arrive at our polls at 6 am to set up. The polls open at 7 am, and don’t close until 8 pm. Then we have to count the ballots, fill out forms, and take down the polls. We won’t be home until 9 pm or later.
Healthy, Filling Snack for a Long Day
So today I mixed up a batch of Apple Walnut Oat Muffins to take to the poll. The muffins are full of good nourishing ingredients – rolled oats, chopped apples and walnuts, yogurt, whole wheat flour, all made delicious with the addition of pumpkin pie spice. Â I have a jar of leftover Trader Joe’s Pumpkin Pie Spice from the holidays. It is extra special. Besides the usual suspects of cinnamon, ginger and cloves, it contains citrus and cardamom. Super yummy.
Maybe I should I call them Apple Walnut Oat Yogurt Spice Muffins. AWOYSM for short.
Bake the Winter Away!
Winter days are perfect for baking. Yesterday, the news said 67% of the United States was covered in snow. Baby, it’s cold out there. Get your baking on! The oven warms the house, while delicious aromas drift out of the kitchen. Muffins are some of the easiest things to bake. Tell your family or friends how much they mean to you with a fresh-baked treat.
The recipe makes about a dozen-and-a-half muffins – enough to share with our fellow poll workers. Good nutrition to fortify us while we do our community service.
Make a Kid Version of Apple Walnut Oat Muffins
IÂ may have mentioned my grandchildren before. When filling the muffin cups, I made a few of them purposely scanty, with the grandkiddos in mind. These Apple Walnut Oat Muffins will be a healthy snack the next time we go to the park or zoo together. Little kids seem to enjoy small food, that they can hold in their little hands.

At least you have snow and not flooding like they have in England. Scotland is not really affected apart from a small area in the Borders.
The muffins look nice so I will try them.

Such delicious Apple walnut muffins! And milk free too! 5-star recipe is easy and healthy and yummy! I baked for 30 and they were still perfect!
